Basil Pesto Recipe


Basil Pesto Recipe
Just in time for spring and spring planting...

1 cup loosely packed fresh basil leaves, large stems removed (about 1 1/2 oz)
1/4 cup olive oil
1 large clove garlic, chopped
1 heaping Tbsp pine nuts (raw)
1/2 Tbsp chopped walnuts
1/3 cup freshly grated parmesan cheese
2 Tbsp freshly grated romano cheese
salt -- to taste

Place basil and the olive oil in food processor and blend until smooth (about 20 sec)
Add nuts and process until smooth (about 20 sec)
Add cheeses and process until smooth (yep, around 20 sec)
Finish with the garlic and salt

Hints:
Don't overprocess the garlic or it can become too strong
Use kosher/sea salt and not table salt
If it tastes bitter, add more cheese
Pesto sauce freezes well!
